LIGHT WHITE RECIPES


10-Minute Chicken and Herb Pasta

Prep time: 5 minutes
Cook time: 5 minutes
Serves 4
2 TB. olive oil
1 onion, chopped
1 clove garlic, chopped
3/4 lb. (approximate) cooked chicken, cut into 1-inch pieces. (Refer to recipe for Tuscan Chicken Breasts that follows.)
3/4 lb. (approximate) cooked pasta; small shapes work best, although spaghetti will serve.
1 tsp. dried basil
1/2 tsp. crushed red pepper
1 TB. dried parsley
Salt and pepper to taste
Parmesan cheese

Heat oil in a large frying pan, add onion and garlic, and cook over medium heat for 5 minutes. Add chicken, pasta, basil, red pepper, and parsley, and heat for another 5 minutes, stirring. Season with salt and pepper, topped with parmesan cheese. Serve with steamed vegetables and a glass of dry white wine for a simple, tasty meal.

Pasta with Herbs

A light and flavorful pasta, just perfect with a glass of white wine.
Prep time: 5 minutes
Cook time: 15 minutes
Serves 4 to 6

1 lb. gemelli pasta (or your favorite)
1/4 cup olive oil
1 bunch scallions, dark green parts removed, white and light green parts chopped
2 tsp. dried basil
1 tsp. dried oregano
2-4 TB. fresh parsley, chopped
Parmesan cheese
Salt and pepper

Boil water for pasta. While pasta is cooking, heat oil in a large skillet over low to medium heat, and sauté scallions and herbs, except the parsley. When pasta is done, drain it, and return it to the pot. Pour scallion mixture over, add the parsley, and toss to coat. Serve with parmesan cheese, salt, and pepper.

Sole Meuniere

The slight brown crispness of the flour, the zing of lemon, the delicate flavor of the sole all combine to make this simple dish a delight.
Prep time: 4 minutes
Cook time: 6 minutes
Serves 4

2 TB. butter
Juice of 1/2 lemon
1 TB. flour
11/2 lb. sole filets
Lemon wedges for serving

In a skillet, melt butter over medium heat. Stir in lemon juice. Sprinkle flour on a clean countertop. Lightly press each side of a filet in flour, and place in the heated skillet. Cook for approximately 6 minutes or until done, turning once.

Serve with rice, steamed vegetables, and a glass of dry white wine. Ah.
